Recipe Details:This yummy almond croissant recipe is really simple and perfectly diabetes-friendly. Your family and friends will be impressed once you treat them to this dessert.
- Almond flour – 1 cup
- Baking powder – 1 tsp.
- Sliced almonds (slightly crushed with your fingers) – 1 tbsp.
- Butter (unsalted, melted) – 1.5 tbsp.
- Large chicken egg – 1
- Cream cheese – 2.5 Oz.
- Mozzarella cheese (shredded) – 1.5 cup
- Salt – 1 pinch
Recipe Directions:Step 1
Put the cream cheese and mozzarella cheese into a microwave safe bowl and heat in a microwave oven at half a minute intervals until the cheeses are completely melted and combined well.
Add the almond flour, baking powder and salt to the mixture of cheeses. Knead with your hands until a dough has formed.
Put the egg into a mixing bowl with the dough, and beat with a hand mixer on high until the egg is well incorporated into the dough.
Put the ready dough in a freezer for half an hour. Then remove from the freezer, put between two pieces of baking paper and roll out until the dough is about a quarter of an inch thick.
Use a sharp knife to cut the dough into 8 large triangles.
Starting at the furthest end, roll the dough triangles down until they form a shape of a crescent.
Preheat oven to 350 F. Put the croissants on a baking sheet covered with baking paper or silicone mat. Press the sliced almonds firmly into the top of the croissants. Bake until golden brown (about 20 minutes).
Remove the croissants out of the oven, brush the melted butter over the top of the hot croissants and serve. Enjoy!
