- Zucchinis – 2
- Eggplants – 4
- Cucumbers – 3
- Basil – 2 tbsp.
- Tomatoes – 7
- Turmeric – 1 tbsp.
- Garlic – ½ head
- Dried oregano – 2 tbsp.
- Olive oil – 3 tbsp.
Recipe Directions:Step 1
Peel zucchinis, eggplants, tomatoes, and cucumbers and then cut them into large cubes. Put the vegetables in a baking dish.
Mince the garlic and add it to the baking dish with the vegetables along with oregano, turmeric, and basil. Drizzle the contents of the baking dish with olive oil.
Preheat oven to 350 F. Bake the vegetables for 20 minutes.
Take the vegetables out of the oven, add salt and mix well.
Put the vegetables back in the oven for 30 more minutes. Then remove from the oven, serve and enjoy!
