Recipe Details:Beef Stroganoff is a tender beef with mushrooms in sour cream sauce – a gourmet, diabetic-friendly dish that can be a great treat for the entire family.
- Beef filet mignon – 1.5 lb.
- Sliced mushrooms (can use champignons or other mushrooms you prefer) – 0.5 lb.
- Beef stock – 0.7 cup
- Medium onion (finely chopped) – 1
- Fat-free sour cream – 8 Oz
- Dijon mustard – 1 tbsp.
- Olive oil – 2 tbsp.
- Cognac – 2 tbsp.
- Dried dill – 1 tsp.
- Salt and ground black pepper – to taste
Recipe Directions:Step 1
Heat olive oil in a large frying pan.
Cut beef to medium pieces and fry on both sides until golden brown. Take the beef off the heat.
Heat some olive oil in another frying pan. Put the chopped onion in there. When onion become golden, add the sliced mushrooms and a pinch of salt. Fry for 10 minutes until all liquid evaporates.
Add the cognac and beef stock to the frying pan with the mushrooms. The liquid should cover mushrooms just a bit. Simmer for about 15 minutes, then reduce heat to low.
Add sour cream, Dijon mustard, salt and pepper to the frying pan with the mushrooms and stir well until the content becomes creamy white.
Add beef, mix well, and cook for about 2 minutes. Then add dried dill and serve hot with a side of your choice. Enjoy!
