Recipe Details:
Easy to cook and pleasure to eat – this winning combination makes this diabetes-friendly taco recipe a perfect candidate for a busy weeknight dinner.


Ingredients:
  • Tortillas – 3
  • Beef tenderloin – ½ lb.
  • Red onion – 1
  • Yellow bell pepper – 1
  • Red bell pepper – 1
  • Cilantro – 1 bunch
  • Vegetable oil – 3 tsp.
  • Sweetener – equivalent to 1 tsp, of sugar
  • TABASCO® sauce – to taste
  • Paprika – to taste
  • Salsa – 5 tbsp.
  • Lime – one half
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    Cut the beef tenderloin into strips.
    Step 2
    Cut the bell peppers and onion into strips.
    Step 3
    In a preheated frying pan, fry the beef and vegetables. While frying add paprika, salt, pepper, Tabasco sauce, and sweetener.
    Step 4
    Preheat oven to 350 F. Place taco tortillas on a baking sheet, and warm in the oven for about 10-15 minutes.
    Step 5
    Put the ready stuffing into the tortillas. Garnish with cilantro, salsa, and a slice of lime. Enjoy!
