Recipe Details:A very healthy, diabetic-friendly dish that can be a great side to any meat entrée and it is also a perfect fit for a vegetarian diet.
- Broccoli – 1 lb.
- Eggs – 2
- Cheese (grated) – 1.5 cup
- Garlic (minced) – 2 cloves
- Scallion (finely chopped) – half a bunch
- Parsley (finely chopped) – half a bunch
- Whole wheat breadcrumbs – 3 tbsp.
- Salt and ground black pepper – to taste
Recipe Directions:Step 1
Divide the broccoli into inflorescences, wash and grind in a blender.
Put the broccoli to a bowl and add the chopped scallions and parsley. You can add dill as well.
Add the garlic to the bowl and beat in the eggs.
Add the cheese to the bowl as well.
Add breadcrumbs, salt and pepper. Mix the content of the bowl well.
Preheat oven to 355 F. With wet hands, make cutlets out of the just prepared vegetable mix. Put the cutlets on a baking sheet covered with baking paper or foil. Bake for 20 minutes. Serve and enjoy!
