Recipe Details:
Brown rice and vegetables makes a great diabetic-friendly side dish that will complement any main course.


Ingredients:
  • Brown rice – 0.5 lb.
  • Canned corn – 8 Oz
  • Bell pepper (cut in small pieces) – 1
  • Carrot (diced) – 1
  • Onion (diced) – 1
  • Garlic – 1 head
  • Canned green beans – half of a 14.5 Oz can
  • Vegetable oil – 4 tbsp.
  • Pilaf seasoning – 1 tsp.
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    Heat vegetable oil in a sauce pan. Put onion in the sauce pan. Divide the garlic into cloves and add to the saucepan without peeling. Then add carrot.
    Step 2
    Cook the vegetables for 4 minutes over medium heat.
    Step 3
    Add bell pepper, green beans, and corn. Cook for 4 more minutes while stirring.
    Step 4
    Add salt, pepper, and pilaf seasoning. Mix well.
    Step 5
    Wash rice in cold water and add it to the sauce pan with vegetables. Cook for 6 minutes.
    Step 6
    Boil 0.5 liter of water. Add water to the sauce pan for about 2 fingers above rice.
    Step 7
    Simmer the content of the sauce pan, covered, over low heat for up to 1 hour. Serve hot as a side or as a main course. Enjoy!
