Recipe Details:This recipe gives you a diabetic-friendly restaurant-quality juicy chicken with roasted cashews that is better and healthies than take-out.
- Chicken breast (cut into small pieces) – 2 lb.
- Raw cashews – ½ lb.
- Teriyaki sauce – ½ cup
- Soy sauce – 5 tbsp.
- Lemon juice – 3 tbsp.
- Olive oil – 1 tsp.
- Ginger (peeled and grated) – 5 tbsp.
- Honey – 1 tsp.
Recipe Directions:Step 1
Add ¼ of the ginger, 1 tsp of soy sauce, honey, and the lemon juice to the chicken, pour over the teriyaki sauce, add marinate in the refrigerator for half an hour.
In a large skillet, fry the grated ginger in olive oil. Add chicken and then add the remaining marinade.
Add the remaining soy sauce to the skillet with chicken. Fry for 5-7 minutes, then cover and reduce heat to a minimum, keep frying for 5 more minutes.
Add the cashew nuts, stir, set the fire to maximum again, remove the lid, wait until the sauce has boiled down. Serve and enjoy with a side of your choice.
