Recipe Details:
“Rice” made of finely chopped cauliflower is a great entrée that you can surprise your guests with. Plus this healthy, diabetic-friendly dish is quick and easy to cook. To make it a more filling and complete main course, you can add sliced lean beef, chicken breast, or shrimp to it.


Ingredients:
  • Cauliflower – 1 lb.
  • Chicken breast (cut in bite-size strips) – 1.3 lb.
  • Scallions (chopped) – 1 bunch
  • Medium carrots (finely diced) – 3
  • Garlic (finely chopped) – 3 cloves
  • Ginger (grinded) – 1 pinch
  • Reduced sodium soy sauce – 2-3 tbsp
  • Sesame oil – 2 tbsp.
  • Vegetable oil – 2 tbsp.
  • Ground black pepper – to taste
Recipe Directions:
Step 1
In a food processor, grind the cauliflower to the rice-like condition.
Step 2
Heat some sesame and vegetable oil in a large non-stick frying pan. Add chicken breast and cook over high heat until fully cooked ( approx. 5 minutes). Make sure to evenly cook the chicken on both sides.
Step 3
Once the chicken is cooked, put it aside on a plate, but let all the cooking juices remain in the frying pan. Put the grinded cauliflower into the frying pan, add some more oils, stir will, and cook for about 4-5 minutes over medium-high heat until the cauliflower gets a bit soft. Stir periodically.
Step 4
Add carrots and scallions. Mix well and cook for about 3 minutes, while stirring periodically. Then, add garlic and cook for 2 more minutes. Add more oils if needed.
Step 5
Add the chicken to the frying pan. Add black pepper. Sprinkle the content of the frying pan with soy sauce, while stirring and cook until cauliflower becomes tender. Serve hot and enjoy!
