This is a diabetic friendly recipe for Coq Au Vin – a classic French chicken dish, which is a chicken stewed in wine.
Step 1 In a large skillet, heat 1 tbsp. of oil over medium heat and fry the onion until golden brown (about 5 minutes). Step 2 Add mushrooms and fry for about 5 minutes until browned. Step 3 Add garlic and fry for 1 more minute. Add a little salt and pepper. Place on a plate and set aside. Step 4 Heat remaining oil in the same skillet over medium-high heat. Salt and pepper the chicken pieces and fry it in the skillet for 4 minutes per side. Then put the ready chicken on a plate and set aside. Step 5 Add wine, half of the chicken broth, tomato paste, and Herbes de Provence seasoning to the skillet. Bring to a boil over medium heat, stirring gently. Step 6 Return the chicken to the skillet, cover and, reducing the heat, simmer for half an hour until tender. Five minutes before the chicken is ready, add the mushrooms and onion. Mix well. Step 7 Place the chicken and vegetables on a dish and cover with foil to keep warm. Step 8 Make the sauce: Heat the butter in the same skillet, over medium-high heat. When melted, add flour and stir. Continue stirring until the flour turns golden. Add the remaining chicken broth and cook, stirring occasionally, until the sauce is thick and smooth. Season with salt and pepper. Step 9 Return the chicken pieces and vegetables to the skillet and mix well so that the sauce covers the chicken and vegetables. Remove the ready dish from the heat, serve and enjoy!
