Step 1 In a large bowl, mix cottage cheese and grated carrots. Step 2 Add sweetener, vanilla extract, and eggs. Mix well. Step 3 Preheat oven to 390 F. Grease a baking dish with vegetable oil. Put the cottage cheese mix in the baking dish. If desired, evenly spread the sour cream over the cottage cheese mix. Put in the stove and cook for 40 minutes. Step 4 Remove the ready cream cheese casserole from the oven, serve with sour cream or fresh fruits. Enjoy!
