Recipe Details:
This is a great diabetic-friendly breakfast choice. Full of flavor and very filling, this dish will help to start the day right for the whole family.


Ingredients:
  • Eggs – 3
  • Onion (finely chopped) – 1
  • Tomatoes (cut into cubes) – 2
  • Bell pepper – one half
  • Small zucchini – one half
  • Scallions – half a bunch
  • Rye bread (cut into cubes) – 2 slices
  • Cheese (finely grated) – ½ cup
  • Vegetable oil for frying
  • Salt – to taste
    Recipe Directions:
    Step 1
    Heat vegetable oil in a frying pan. Put the zucchini and the onion in the frying pan and fry over medium heat until the zucchinis are soft. Make sure to fry the zucchinis on both sides. Almost at the end of frying the vegetables, add tomatoes and fry until juice evaporates.
    Step 2
    Add the bread to the vegetables. Beat the eggs and add them to the vegetable as well. Add salt and spices.
    Step 3
    Cook until the eggs set, then add cheese.
    Step 4
    When the cheese melts, remove the ready dish from the heat, serve and enjoy!
