High blood test results - what to do?

My 8 y.o. daughter all of a sudden started eating really a lot! We did her blood tests and fasting was 86 and A1C is 5.7. I’m really concerned with these numbers. I also tested her sugar at home prior to lab testing a few times and it was between 80 and 141. A few days a go she had 15 Belgian chocolate cookies and we got 81 in about 3 hours. But the other day she ate a few biscuits and showed 139 in an hour, but then 89 in 2.5 hours. I’m really concerned and have no idea how to act next.
