Recipe Details:
Here is a recipe for a diabetic-friendly and quick to make breakfast – an omelet with vegetables, cheese and herbs.


Ingredients:
  • Zucchini (sliced) – one half
  • Tomato (sliced) – 1
  • Mozzarella cheese (sliced) – 1.5 Oz
  • Eggs – 2
  • Milk – 2 tbsp.
  • Dill (finely chopped) – 3 sprigs
  • Parsley (finely chopped) – 3 sprigs
  • Vegetable oil for frying
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    Break the eggs into a bowl, beat them with a whisk until smooth.
    Step 2
    Add milk, dill and parsley. Mix well.
    Step 3
    Heat vegetable oil in a frying pan. Fry the zucchinis on both sides over medium heat until soft.
    Step 4
    Add the egg mix to the frying pan. Then put the tomato and mozzarella on top.
    Step 5
    Cover the pan with a lid and cook over low heat for 10-13 minutes until there is no liquid on top of the omelet. Serve and enjoy!
