Recipe Details:Aromatic, delicious, and diabetic-friendly peanut soup is an awesome choice for vegetarians, fasting people, and everybody who enjoys healthy food.
- Peanuts (blanched) – 1 cup
- Medium onion (finely chopped) – 1
- Medium carrots (grated) – 1
- Garlic (finely chopped) – 1 clove
- Medium potatoes (peeled and diced) – 2
- Allspice peas – 3
- Bay leaf – 1
- Oregano – ½ tsp.
- Vegetable oil – 4 tbsp.
- Salt and ground black pepper – to taste
- Parsley – 2 sprigs (for serving)
Recipe Directions:Step 1
Fry carrots, onions, and garlic in vegetable oil.
Grind the peanuts in a blender.
Add a glass of water to the blender and keep grinding until creamy.
Boil water (or broth) in a saucepan. Add the fried vegetables and bring to a boil. The amount of water (or broth) to use depends on the desired thickness of the soup.
Put allspice, oregano, bay leaf, salt and pepper in the soup. Then add potatoes and cook for 20 minutes.
Put the blended peanuts in the saucepan with other ingredients, mix well so that there are no lumps.
Cook the peanut soup over low heat, stirring frequently, for 30 more minutes.
Sprinkle the peanut soup with parsley, serve and enjoy!
