Recipe Details:
Smoked salmon and vegetables salad is very light, diabetic-friendly, and very quick to make. It is usually eaten very quickly too because it’s very tasty and can complement any main course!


Ingredients:
  • Smoked salmon (thinly sliced) – 6 Oz
  • Lettuce (cut into large pieces) – 3 Oz
  • Celery (cut into small pieces) – 1.5 Oz
  • Medium cucumber (sliced) – 1
  • Avocado (cut into medium pieces) – 1
  • Dijon mustard – 1 tbsp.
  • Orange – 1
  • Parsley (chopped) – 1 tbsp.
  • Olive oil – 2 tbsp.
  • Salt – to taste
    Recipe Directions:
    Step 1
    Place the cut lettuce into a salad bowl.
    Step 2
    Cut the orange in half. Peel and segment one half of it.
    Step 3
    Add celery, cucumber, avocado, and the orange segments. Then add salmon.
    Step 4
    Make the salad dressing: Squeeze the juice from the orange, then blend it together with the mustard, parsley, salt, and olive oil.
    Step 5
    Pour the ready dressing into the salad and mix well. Serve and enjoy!
