Recipe Details:
The fried pumpkin gives a new flavor to a simple diabetic-friendly vegetable salad, making its taste very original.


Ingredients:
  • Pumpkin (cut in medium cubes) – 0.7 lb.
  • Tomato (cut into slices) – 1
  • Cucumber (cut into slices) – 1
  • Onion (cut in thin half-rings) – 1
  • Garlic (finely chopped) – 1 clove
  • Olives (cut into slices) – ¼ cup
  • Lemon juice – 2 tbsp.
  • Parsley (chopped) – 3 sprigs
  • Mint (chopped) – 3 sprigs
  • Olive oil – 3 tbsp.
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    Heat 2 tbsp. of olive oil in a frying pan. Put pumpkin in there and fry it until soft and browned. Then let it cool.
    Step 2
    Combine all if the ingredients in a salad bowl. Add salt, pepper, and 2 tbsp. of lemon juice and mix everything well.
    Step 3
    Add the fried pumpkin and mix gently again. The salad is ready. Enjoy!
