- Large zucchini – 1
- Small tomatoes (cut into rings) – 2
- Whole-wheat flour – 2 tbsp.
- Bell pepper (cut into rings) – 1
- Low-sodium cheese (grated) – 2/3 cup
- Parsley (chopped) - 5-6 sprigs
- Salt – to taste
Recipe Directions:Step 1
Grate the unpeeled zucchini on a coarse grater. Add a small amount of salt and leave for 15 minutes.
Squeeze the zucchini to remove liquid. Add flour and egg to the zucchini and mix well.
Lay the resulted dough in a thin layer on a silicone mat or aluminum foil, greased with vegetable oil.
Preheat oven to 360 F. Evenly place the tomato and bell pepper on the crust, sprinkle with cheese, and bake in the oven for 35 minutes.
Remove the ready zucchini pizza from the oven. Garnish with parsley. If desired, add some more grated cheese on top. Serve and enjoy!
