With this diabetes-friendly recipe of many people’s favorite General Tso Chiken you don’t need to opt for takeout and risk consuming ingredients that you might not want to consume. This recipe will satisfy your craving, while keeping the extra carbs away.
Ingredients:
Skinless and boneless chicken breasts (cut into small cubes) – 2
Step 1 Make the sauce: Combine soy sauce, hoisin sauce, Thai chili sauce, brown sugar, and ketchup in a bowl, mix well and then set aside. Step 2 Put the pieces of chicken in another bowl, add the cornstarch, season with salt and pepper, mix and set aside as well. Step 3 Heat a wok or a large frying pan over high heat. Once the pan is hot, add the peanut oil, then garlic, and red chili peppers, stir-fry for a few seconds. Then add the chicken and stir-fry for about 2 minutes. Step 4 When the chicken starts turning opaque, add the dry sherry and cook for another 4 minutes. Then add the sauce that we made earlier and bring the content of the wok to a boil. Step 5 Reduce the heat to medium and keep simmering until the chicken is cooked through and the sauce has thickened. That may take a couple of minutes. Step 6 Turn off the heat, discard the red chili pepper, and stir in the scallions. Then serve and enjoy!
