Recipe Details:
This recipe is for a delicious and diabetes-friendly lasagna that will give you joy at the dinner table. The combination of ground turkey and ricotta or cottage cheese makes this dish light, yet hearty and filling. A perfect dinner treat for the entire family.


Ingredients:
  • Turkey breast (ground) – 1.5 lbs.
  • Whole wheat lasagna noodles – 9 sheets
  • Egg – 1
  • Fat-free cottage or ricotta cheese – 16 Oz
  • Crushed tomatoes – 1 can of 28 Oz (without salt)
  • Skim mozzarella cheese (shredded) – 2.5 cups
  • Small onions (chopped) – 2
  • Basil (chopped) – 5 leaves
  • Garlic (minced) – 3 cloves
  • Oregano (dried) – 1.5 tsp.
  • Olive oil – 2.5 tsp.
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    Cook noodles as written on the packaging. If you’re using oven-ready noodles, skip this step.
    Step 2
    Drain the noodles and put them in cold water
    Step 3
    Heat the olive oil in a large skillet and add the chopped onion. Sauté until lightly golden.
    Step 4
    Add garlic to the onion, then add half of the oregano and basil.
    Step 5
    Add the turkey to the skillet and cook, stirring periodically and breaking up the big pieces.
    Step 6
    Drain excess liquid from the skillet, then add salt and pepper.
    Step 7
    Add the tomatoes to the turkey and cook until the mixture starts to boil. After that, remove the skillet from heat.
    Step 8
    In a bowl, mix the cottage or ricotta cheese with the egg. Add the second half of the basil along with salt and pepper.
    Step 9
    Remove noodles from water, then place 3 pieces of noodles in a rectangular baking pan so they cover the bottom of the frying pan.
    Step 10
    Add and spread evenly half of the turkey mixture over the noodles. Then add half of the cheese mixture and spread evenly as well and sprinkle some cottage or ricotta cheese.
    Step 11
    Create a new layer by adding 3 more lasagna noodles on top.
    Step 12
    Spread the remaining turkey and cheese mixtures. Then sprinkle more cheese on top.
    Step 13
    Create another layer by placing 3 more lasagna noodles on top. Then sprinkle with dried oregano and remaining cottage or ricotta cheese.
    Step 14
    Spray a piece of aluminum foil with nonstick spray and cover the lasagna with it.
    Step 15
    Preheat oven to 350 F and bake the lasagna covered for 50 minutes.
    Step 16
    Remove the aluminum foil and bake for 12 more minutes.
    Step 17
    Broil the lasagna for another 3 minutes or until the top is golden-brown.
    Step 18
    Remove the ready lasagna from the oven and let it rest for about 12 minutes. Then serve and enjoy!
