Recipe Details:This is a recipe for a delicious dish that everybody knows and most people love. And besides being popular and tasty, it’s diabetic-friendly as well.
- Crab meat – 2 lb.
- Bell pepper (diced) – 1
- Medium onion (diced) – 1
- Eggs – 2
- Greek yogurt – 3 tbsp.
- Butter – 2 tbsp.
- Ground bay leaf – ½ tsp.
- Garlic powder – 1 tsp.
- Ground black pepper – ½ tsp.
- Olive oil – 3 tbsp.
- Parsley – 1 tbsp.
- Whole wheat breadcrumbs – 3 tbsp.
Recipe Directions:Step 1
Heat 1 tbsp. of oil in a frying pan. Add onion and bell pepper and fry until onion is golden brown (about 9 minutes). Remove from heat and let the onion and pepper cool.
In a large mixing bowl, beat 2 eggs and mix with 3 tbsp. of Greek yogurt.
Cut the crab meat into small pieces and add to the bowl with the eggs and yogurt.
Add the fried bell peppers, onions, and parsley to the bowl with crab meat, eggs and yogurt. Mix well. Cover and put in a fridge for 30 minutes.
With wet hands, divide the mixture into ½” thick crab cakes (patties).
Heat 1 tbsp. of olive oil and 1 tbsp. of butter in a frying pan. Fry the crab cakes for 5 minutes per side. If they start browning too quickly, reduce heat. Add more oil and butter if necessary. Serve and enjoy!
