Recipe Details:
An excellent simple and diabetic-friendly snack or appetizer for any occasion is eggs stuffed with cheese and herbs.


Ingredients:
  • Grated low-fat and low-sodium cheese (such as Emmental and Parmesan) – ¼ cup
  • Low-fat plain Greek yogurt – 2 tbsp.
  • Parsley leaves (chopped) – 1 tbsp.
  • Dijon mustard – ½ tsp.
  • Wine vinegar – ½ tsp.
  • Ground turmeric – 1 pinch
  • Ground coriander – 1 pinch
  • Salt and ground black pepper – to taste
  • Pitted olives cut in half (for serving) – 6
    Recipe Directions:
    Step 1
    Hard-boil eggs and then cool them in cold water.
    Step 2
    Peel then eggs, cut in half, and remove the yolks.
    Step 3
    Make the egg filling: Put the yolks with grated cheese, Greek yogurt, parsley, mustard, wine vinegar and spices in a blender and grind until the mix is smooth.
    Step 4
    Place the egg filling into a bag with a cut corner or a pastry bag.
    Step 5
    Stuff the egg whites with the prepared filling. Put olives on top. Serve and enjoy!
