Recipe Details:
This delicious, nourishing, and diabetic-friendly potato gratin with chicken and mushrooms can easily become your family favorite.


Ingredients:
  • Chicken breast (cut into slices) – 2 pieces
  • Champignon mushrooms – 10
  • Potatoes (cut into round slices) – 4
  • Onion(cut into rings) – 1
  • Low-fat and low-sodium cheese (grated) – 1¼ cup
  • Almond milk – ½ cup
  • Curry – to taste
  • Salt and ground black pepper – to taste
  • Fresh parsley (chopped) – half a bunch
  • Vegetable oil for frying
Recipe Directions:
Step 1
Heat 2 tbsp. of vegetable oil in a frying pan. Fry the mushrooms until all the liquid has evaporated.
Step 2
Put the slices of chicken and potatoes in a greased baking dish in a circle.
Step 3
Place the fried mushrooms and onion rings on top. Add salt and pepper.
Step 4
Dissolve curry in milk and pour into the baking dish with the chicken, potatoes, and mushrooms. Sprinkle with grated cheese.
Step 5
Preheat oven to 355 F. Bake the dish for 45 minutes.
Step 6
Remove the ready dish from the oven, sprinkle with chopped parsley, server and enjoy!
