Recipe Details:
This Korean dish is a great choice for people with diabetes as it is mostly made of lean meat and non-starchy vegetables. But it is not only diabetes-friendly it is easy to cook and delicious as well. – A great lunch or dinner option!


Ingredients:
  • Chicken breast (thinly sliced) – 0.5 lb.
  • Egg yolk – 1
  • Zucchini (cut into thin strips) – one half
  • Carrot (cut into thin strips) – one half
  • Mushrooms (thinly sliced) – 5-7
  • Shallots (cut into thin strips) – 2
  • Baby spinach – 1 cup
  • Cauliflower – ¼ head
  • Olive oil – 1.5 tbsp.
  • Soy sauce – to taste
  • Sesame oil – to taste
  • Sesame seeds – to taste
  • Soy sauce for Bulgogi marinade – 2 tbsp.
  • Sesame oil for Bulgogi marinade – 1 tbsp.
  • Korean chili paste (Gochujang) for Bulgogi marinade – 1 tbsp.
    Recipe Directions:
    Step 1
    Prepare the Bulgogi marinade: In a mixing bowl combine 2 tbsp. of soy sauce, 1 tbsp. of sesame oil, and 1 tbsp. of Gochujang.
    Step 2
    Marinate the chicken in the Bulgogi sauce.
    Step 3
    While the meat is marinating, make cauliflower rice. For that, cut the cauliflower into small pieces and blend it in a food processor until it looks like rice. Put the processed cauliflower on a baking sheet covered with aluminum foil. Then mix the cauliflower with 1 tbsp. of olive oil and spread it evenly on the foil. After that, preheat oven to 425 F and roast the cauliflower in oven for about 30 minutes, stirring periodically to cook evenly. When the cauliflower rice is ready, set it aside. (Keep it warm.)
    Step 4
    Heat a little sesame oil in a frying pan, then stir-fry each vegetable (zucchini, carrots, mushrooms, shallots, and spinach) separately for 2-3 minutes on medium-low heat in a little bit of soy sauce. Then set the vegetables aside separately. (Keep warm.)
    Step 5
    Heat a little olive oil in a pan and stir fry the chicken for a few minutes until it’s cooked through.
    Step 6
    Now, let’s assemble the dish. Add a little sesame oil on the bottom of a large plate. Top with cauliflower rice. Put cooked vegetables, and chicken in segments, resembling the spokes of a bicycle wheel.
    Step 7
    Carefully place the egg yolk in the middle of the plate. Sprinkle the assembled dish with sesame seeds. Serve and enjoy!
