Recipe Details:This popular Korean appetizer has a savory sweet & sour taste and looks very appetizing. Making this aromatic diabetic-friendly dish is a quite quick and simple process. Heh fits well with any meat entrée.
- Eggplants (cut into strips) – 1 lb.
- Bell pepper (seeds removed, cut into strips) – 2
- Chili pepper (cut into rings) – 1
- Garlic (minced) – 3 cloves
- Onion (cut into half rings) – 2
- Carrot (grated in Korean style) – ½ cup
- Garlic oil – ¾ cup
- Bay leaf – 2
- Vinegar – 1½ tbsp.
- Salt and ground black pepper – to taste
Recipe Directions:Step 1
Combine the bell peppers, chili pepper, garlic, onion, and carrot. Season with salt and pepper, add bay leaf and vinegar. Mix well.
Fry the eggplant in garlic oil (or in vegetable oil) until golden brown.
Add the eggplants and oil to the vegetables, stir, cover, and leave at room temperature until the eggplants cool completely. Stir several times while they are cooling. Then serve and enjoy!
