Recipe Details:
This diabetic-friendly burger is easy to make and full with Mediterranean flavor. And it’s perfect for vegetarians as well!


Ingredients:
  • Dry chickpeas – 1.5 cups
  • Tomato – 4 slices
  • Cucumber (sliced) – 1
  • Garlic (mined) – 4 cloves
  • Cilantro (chopped) – ½ cup
  • Dill (chopped) – half a bunch
  • Onion (chopped) – 1
  • Red onion – 4 rings
  • Lettuce leaves – 4
  • Parsley (chopped) – half a bunch
  • Lemon juice – 1 tbsp.
  • Thyme – 1 tbsp.
  • Ground red pepper – 1 tsp.
  • Baking powder – 1 tsp.
  • Greek yogurt – ½ cup
  • Vegetable oil – 3 tbsp.
  • Salt – 1.5 tsp.
  • Whole wheat buns – 4
    Recipe Directions:
    Step 1
    Soak the chickpeas in cold water for 8-10 hours.
    Step 2
    Remove the chickpeas from water and grind into a mushy mass in a blender.
    Step 3
    Combine the chopped onion, cilantro, dill, parsley, and minced garlic with the chickpeas. Grind in a blender. Chill the mixture in a fridge for half an hour and then make 4 burgers.
    Step 4
    Fry the patties in vegetable oil on each side until brown.
    Step 5
    Warm the buns on the frying pan, over medium heat, for a few minutes.
    Step 5
    Make burgers: Put a lettuce leave on the bottom bun, then chickpea cutlet, tomato and red onion. Then pour Greek yogurt on top. Cover with the top bun. Enjoy!
