Recipe Details:Grilled eggplants are the perfect complement to the grilled meat. The’re fast and easy to cook, diabetic-friendly and simply delicious!
- Eggplants (cut into slices) – 3
- Onion (cut into rings) – 1
- Vinegar – 2 tbsp.
- Water – 1¼ cup
- Vegetable oil – 1 tbsp.
- Salt – 1 tsp.
- Spices – to taste
Recipe Directions:Step 1
Put the eggplant slices and onion rings into a large bowl. Add salt and spices and mix well.
Mix water with vinegar and vegetable oil, add this mix to the eggplants and leave to marinate for 1 hour.
Cook on an open grill, on a wire rack, until golden brown on both sides.
Serve hot, although these eggplants taste great cold as well. Enjoy!
