Recipe Details:
This diabetic-friendly dish combines all the healthiness of oatmeal and the tastiness of pancakes. Oatmeal is actually one of the best foods for protecting the heart and lowering cholesterol, which is very important in diabetes. And everybody knows about the benefits of blueberries, especially for your vision.


Nutrition Facts:
Per one serving: Protein 4g, Fat 3g, Saturated fat 1g, Carbohydrates 25g, Cholesterol 22mg, Sodium 101mg.


Cooking Times:
Prep time: 20 mins
Baking time: 40 minutes


Ingredients:
  • Oatmeal – 0.5 lb.
  • Whole grain flour - 0.5 cups
  • Skim milk – 1 cup
  • Egg – 1
  • Egg white – 1
  • Melted butter – 1 tbsp.
  • Lemon zest – 1 tsp
  • Fresh blueberries – 1 cup
  • Sweetener (equivalent to 3 tbsp. of sugar)
  • Baking soda – ¼ tsp
  • Olive oil
  • Salt – 0.2 tsp
  • Sour Cream – 0.5 cups (optional)
    Recipe Directions:
    Step 1
    In a bowl, combine oatmeal, flour, baking soda, salt, and sugar.
    Step 2
    In a separate bowl, mix together milk, egg white, egg, butter and lemon zest.
    Step 3
    Make the dough: Combine the two mixtures, mix until it becomes a homogeneous mass.
    Step 4
    Gradually stir in the blueberries with a rubber spatula. Let it cool for 30 minutes.
    Step 5
    Preheat a frying pan over medium heat. Pour olive oil on a frying pan. Put the dough in the frying pan and fry the pancakes. If the surface of the pancakes begins to bubble a little, turn them over and fry for another 3 minutes.
    6. If desired, you can put sour cream on top of the finished pancakes. Add fresh berries and enjoy!
