Step 1 In a mixing bowl, combine all liquid cake ingredients (eggs, heavy cream, melted butter, clear vanilla, Red Food Coloring, and MCT oil) together with the Pyure sweetener and mix them. Step 2 Add all the dry cake ingredients (coconut and almond flour, baking powder, baking soda, Guar gum, Dutch-Processed cocoa powder, and the pink salt) to the liquid ingredients mixture. Step 3 Grease two 6x2” cake pans and divide the dough between two cake pans. Cover each cake pan with aluminum foil. Step 4 Preheat oven to 350 F, place the cake pans on the middle rack of the oven and bake for half an hour. To check if the cake is done, poke it with a knife and if the knife comes out clean, the cake is ready. Otherwise, keep the cake pans in the oven for 5 more minutes and repeat the test with the knife. Bake the cake until it’s ready, then take cake out of the oven and let it cool completely. Step 5 Make the frosting: Combine all the frosting ingredients (cream cheese, heavy cream, Pyure Organic All-Purpose Blend, and clear vanila) in a mixing bowl, then blend them with a mixer until smooth. Step 6 Spread the frosting on one cake layer and place the second layer on top. After that, spread the frosting over the top and the sides of the cake. Serve and enjoy!
