Recipe Details:Tacos with shrimp are among the most popular ones out there. – They’re light, delicious and diabetes-friendly.
- Corn tortillas – 3
- Medium shrimp (boiled) – 12
- Iceberg lettuce (chopped) – ½ cup
- Cilantro (chopped) – 1 bunch
- Scallions (chopped) – 1
- Ginger paste or minced ginger – 3 tbsp.
- Medium avocado (diced) – 1
- Chili pepper (chopped) – 1
- Cherry tomatoes – ¼ cup
- Salt and ground black pepper – to taste
Recipe Directions:Step 1
In a large salad bowl, combine avocado, shrimp, scallion, died cherry tomatoes, chili pepper, iceberg lettuce, ginger paste, salt, and pepper.
Preheat oven to 350 F. Place taco tortillas on a baking sheet, and warm in the oven for about 10-15 minutes.
Put the finished mixture into tortillas, garnish with cilantro, serve and enjoy!
