Recipe Details:
Tender on the inside and crispy on the outside, these diabetic-friendly pancakes are extremely delicious and very easy to make!


Ingredients:
  • Broccoli – 1 head
  • Grated parmesan cheese – 8 tbsp.
  • Garlic – 2 cloves
  • Chicken egg – 1
  • Almond flour – ¾ cup
  • Almond milk – ½ cup
  • Olive oil – ¼ tbsp.
  • Salt – ¼ tsp.
  • Ground black pepper – ¼ tsp.
Recipe Directions:
Step 1
Divide the broccoli into inflorescences, then put them in a small saucepan with boiling water, cover and cook for 5 minutes. Then drain the remaining water and set the broccoli aside.
Step 2
Beat the egg in a large bowl. Add flour, parmesan, garlic, salt and pepper. Then stir, add milk and stir a little more.
Step 3
Add the broccoli to the bowl with the egg and flour mix.
Step 4
Mash the content of the bowl the same way as you were making mashed potato.
Step 5
Preheat a little oil in a frying pan. Make pancakes by putting the liquid dough in the frying pan, shaping each portion of the dough with a spoon. Fry the pancakes on both sides until golden brown. Place the pancakes on a paper towel for a few minutes, then serve and enjoy!
