Recipe Details:Broccoli soup is very nutritious and diabetic-friendly while being delicious and easy to cook.
- Broccoli (divided into inflorescences) – 14 Oz
- Walnut oil – 2.5 tsp.
- Almonds (ground) – 1/3 cup
- Sesame seeds – ¼ cup
- Salt, ground black pepper, cumin, thyme, nutmeg – to taste
Recipe Directions:Step 1
Boil some water put almonds in there for a few minutes. Peel the almonds and grind them in a blender.
Boil a pot of water. When water starts boiling, put the broccoli in there. Cook until tender (approx. 5 minutes). While broccoli is cooking, add salt and spices.
Place the boiled broccoli into the blender and start grinding while little by little adding the broth in which the broccoli was cooking until you get the desired consistency.
Serve to plates. Add walnut oil, then add the ground almonds and sesame seeds on top. Bon appetit!
