Recipe Details:
A great diabetic-friendly dinner option is a whole wheat pasta salad with grilled shrimp and tomatoes, arugula and cheese.


Ingredients:
  • Raw shrimp (peeled) – 0.8 lb
  • Cherry tomatoes – 24
  • Whole wheat pasta – ½ lb
  • Arugula – 1 cup
  • Parmesan – ¼ cup
  • Butter (melted) – 1.5 tbsp.
  • Lemon juice – 1 tbsp.
  • Olive oil – 1 tbsp.
  • Fresh oregano (chopped) – 1 tbsp.
  • Garlic (minced) – 1 clove
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    In a large bowl, combine shrimp, minced garlic, olive oil, cherry tomatoes, salt and pepper. Mix well.
    Step 2
    Preheat grill. Put tomatoes and shrimp on skewers and place on the grill rack. Fry for 5-8 minutes on each side.
    Step 3
    Boil the pasta according to the instructions on the package. Drain the water, putting about 5 tbsp. aside.
    Step 4
    Add lemon juice and melted butter to the pasta. Mix well. Add the water left from cooking pasta.
    Step 5
    Add the fried shrimp with tomatoes, arugula, oregano, and grated cheese to the pasta. Mix everything well. Serve and enjoy!
