Recipe Details:This is an awesome vegie burger that is diabetic-friendly and perfect anyone sticking to a vegetarian diet.
- Broccoli – 1.5 cup
- Couscous – 1/3 cup
- Olive oil – 2 tsp.
- Water – 1 cup
- Scallion (chopped) – ½ bunch
- Ground thyme – 2 tsp.
- Canned chickpeas – ½ cup
- Sesame oil – 1 tbsp.
- Whole wheat bread crumbs – 7 tbsp.
- Whole wheat buns – 4
- Toppings of your choice
Recipe Directions:Step 1
Cook the couscous: Put couscous in a small saucepan, add water to cover, bring to a boil, and simmer over low heat for about 13 minutes so that the couscous absorbs the liquid.
Place the broccoli in the microwave oven for about 5 minutes and cook until half cooked.
Heat olive oil in a frying pan and sauté the chopped scallion for 4 minutes. Then stir in the cumin.
Put the broccoli, chickpeas, couscous, scallions, and sesame oil in a blender and grind until smooth.
Form 4 burgers, roll patties, roll in bread crumbs and fry in olive oil in the frying pan until tender.
Warm the buns on the frying pan, over medium heat, for a few minutes.
Make the burgers with toppings of your choice (such as lettuce, tomatoes, cucumbers, pickles, onions, Greek yogurt, mozzarella cheese, Cheddar cheese, etc.) Serve and enjoy!
